Cancer Cooking: Part 1

Wow guys, hi, what a long and exciting minute it’s been since we were last here! And what a ride it’s been, oh boy.

Because there’s nothing like a diagnosis of stage 1 cervical cancer and the necessity of urgent medical attention to really get the inspiration flowing in the kitchen. Thanks to NYU and the excellent team of physicians we have there, we’re thrilled to share some of our favorite things we have been cooking and eating for the past month. First up on the list?

47-minute baked chicken breasts!

These chicken breasts are best served the night before you are scheduled to have a PET/CT scan, which will let your doctor know if the cancer is in your lymph nodes or not.

So filling and delicious

It is important to not eat any carbohydrates before a PET/CT scan, so here’s the recipe:

  1. Your husband stress-buys some chicken breasts and roasts them in the oven for your dinner.
  2. When he asks you if you think the chicken is done after baking about 30 minutes, add 17 minutes of cooking time and walk away.
  3. Promptly forget you added 17 minutes of cooking time, because you have cancer.
  4. Serve with 1/4 avocado and a chainsaw.
